Gruumbier Suupe - Potato Soup

This establishment is no longer there, but when I visited Lancaster some 30 years back, it was. Here is the description:
"The Amish Homestead" Located at 2034 Lincoln Highway East (Route 462) 3 miles East of Lancaster, Penna. (Opposite Garden Spot Gifts) "Look for the Orange Milk Cans at Entrance" The Only "Genuine" exhibit of its kind in Lancaster County. This beautiful and scenic 71-acre farm (dating back to 1744) is occupied by an Old Order Amish Family - using horses and Mules. There is plenty to see, do, and learn - It's a Must to see - An experience of a lifetime.
   At the time, I purchased a softcover 47 page cookbook, called, The Amish Homestead Cookbook. Every now and then we will feature one of those recipes.
Here is one for their POTATO SOUP (Gruumbier Suupe)
4 cups diced potatoes
1 medium onion
1 qt. milk
3 T. flour
1 T. butter
1 egg beaten
Salt and pepper
Boil potatoes and onion in a small amount of water until soft. Add milk, salt and pepper. then reheat. Brown flour in the butter and blend it slowly into the potato mixture.  Add a little water to the beaten egg and stir into the soup.  let it cook for a few minutes and serve with a sprinkling of chopped parsley. 
Note:  If lactose is a problem, or you eat vegan, try using unsweetened almond or soy milk, and margarine instead of butter. Skip the egg.
